Karen's Delicious Biscuit Recipes

Syrup Biscuits       Anzacs Biscuits


Syrup Biscuits

Ingredients:
8 oz granulated sugar
8oz block butter
1 tablespoon golden syrup
12 oz self raising flour
1 teaspoon bicarbonate of soda

Additional ingredients as you wish:-
1 bag chocolate chips (white, milk or dark chocolate)
Glace cherries and coconut or ground almonds
Oats
Sultanas

Method:
1.   Preheat the oven to 150 degrees or gas mark 3/4.
2.   Mix the sugar, butter and golden syrup together and beat until fluffy.
3.   Add the flour, bi-carb and any additional ingredients and mix well.
4.   Use hands to roll into sausage shape rolls.
5.   Cut the mixture up into pieces about 1 inch in diameter.
6.   Press the mixture gently into a greased baking tray and put into the oven.
7.   Bake for about 15 minutes or until they have spread and are slightly brown all over.
8.   Take out of the oven and allow to cool for a few minutes before taking them off the trays.

Tips:

1.   You may need to move the trays around in the oven to ensure a consistent colour when baking.
2.   Biscuits are nicer if made by hand - not with an electric mixer.
3.   Allow space on a tray for biscuits to spread - usually 8 or 9 to a tray.

Anzacs

Ingredients:

4 oz granulated sugar
4 oz butter
1 dessert spoon of golden syrup
5 oz oats
4 oz self-raising flour
1 teaspoon bicarbonate of soda
1 tablespoon boiling water

Additional ingredients as you wish:-
Glace cherries
Dried fruits such as apricots, papaya, pineapple, sultanas, coconut
Chopped hazelnuts, almonds or walnuts

Method:

1.   Preheat the oven to 150 degrees or gas mark 3/4.
2.   Put the sugar, butter and golden syrup into a pan and heat until melted.
3.   Take the pan off the heat and add the oats and flour and mix well.
4.   Mix the bi-carb with the boiling water and add to the pan and mix well.
5.   Allow to cool a little.
6.   Use hands to make balls of the mixture and bake on a greased baking sheet - about 8 to a baking sheet.
7.   Bake for about 10 minutes until slightly golden.
8.   Take out of the oven and allow to cool for a few minutes before taking them off the trays.
